Start with three ingredients, then let the place change the plate. Rice, butter and saffron are a useful introduction to the Milanese table, while Lombardy's wider food traditions reach far beyond a single risotto.
Rice · Look beyond the city
The Pavia area and Lomellina connect rice dishes with the countryside that produces the crop. On a first trip, a city lunch is an easy beginning; on another day, a rice-country visit can put the ingredient into its landscape.
Saffron · Milan's golden signature
Risotto alla milanese uses saffron for its colour and aroma. Traditional preparations can include marrow and meat stock, so ask how the kitchen makes it if you have dietary requirements. The name alone does not tell you whether a dish is vegetarian.
Butter and cheese · Texture matters
At home, pay attention to heat and consistency: the rice should move easily across the plate, with a finish that holds the dish together. Add the finishing butter and cheese off the heat, then taste before adding more salt.
Beyond risotto
The mountain table offers another combination of grain and dairy: Valtellina's pizzoccheri pair buckwheat pasta with vegetables, cheese and garlic butter. It is a different dish and a different setting, worth discovering in its own right.
