A pantry that changes across the island
Think in ingredients and local combinations rather than a single fixed Sicilian menu. Aubergines, tomatoes, olives, capers, citrus, almonds, pistachios and different cheeses offer starting points. Season, location and the cook matter.
Aubergines in two directions
Caponata uses a sweet-and-sour balance and comes in many local versions. Pasta alla Norma belongs especially to Catania and brings fried aubergine together with tomato and ricotta salata. A vegetable base does not tell you everything about allergens or additional ingredients.
Ricotta is not one ingredient in every form
Fresh ricotta in pastry and ricotta salata grated over pasta serve different purposes. Ask about the actual cheese used and how a chilled dessert is handled. Do not carry perishable pastry around all day in warm weather.
Look beyond a generic souvenir
Read the producer’s label and ask about origin, storage and intended use. Protected names refer to specific products and production rules. Buy what you will use, and check travel restrictions before taking food across borders.
Bring a flavour home
Begin with our Pasta alla Norma or Caponata home adaptations. They offer a practical route into the pantry without claiming to reproduce every family or restaurant version.
