Tajarin, Plin & the Piedmontese Table

Two pastas offer an easy way into the region: fine strands of tajarin and small pinched parcels of plin.

Follow the pasta, then the place

Tajarin are slender strips of egg pasta. Doughs differ: some are especially rich in yolks, while others use a different balance of eggs. Look for the kitchen’s preparation rather than one supposedly universal formula.

What the pinch means

Plin refers to the small pinch used to close the filled pasta. Around the Langhe, these parcels connect a delicate wrapper with a savoury filling. Meat, vegetables and seasoning depend on the recipe.

Let a simple sauce do its job

Butter and sage can keep the pasta central; a roast sauce offers another direction. Ask which pairing the kitchen recommends for its own dough and filling. A short menu can still offer a very satisfying meal.

A table built from more than pasta

Breadsticks, a vegetable antipasto, local cheese or a warm shared bagna cauda can frame the meal. Order according to appetite. Each table has room for its own balance of familiar dishes and the season’s ingredients.
